Gratined with ham, they are the first classic course of the world famous Harry's Bar. This dish is an Italian-French co-production. The pasta, ham and cheese are Italian and the sauce and cooking method are French. The secret obviously lies in the ingredients and the preparation methods, elements common to all Cipriani pastas: 1 kg of the best durum wheat semolina, 7 fresh eggs processed with precision, energy and patience. Over 80 folding steps thanks to a machine designed by Arrigo Cipriani. After 14 hours of drying at low temperatures, we obtain a thin sheet that melts in the palate and that in a few miracles of preparation becomes generously perfectly al dente.
