Recoltare manuală, două sortări manuale și una în funcție de densitate. Vinificare cu macerare la rece pe pieliță timp de 30-35 zile în cuve de inox de 50-80 hl, maturare 12-14 luni pe drojdii fine în butoaie din stejar franțuzesc 100% noi.
