The aroma is a combination of light cedar, earth, dark chocolate, nuts, while bringing notes of cinnamon, cocoa nibs, hay, wood, almonds, vanilla sweetness and black pepper. Finally, after a V-cut, the cold tasting includes aromas of anise, black pepper, leather, earth, almonds, cedar and sweet strawberry jam.
The main flavors change a bit during the second third of Oliva, with the dark chocolate note turning into a more powdery, chalky cocoa flavor, followed by notes of leather, creamy almonds, fragrant earth, roasted coffee beans and toast. There seems to be a bit more of both the maple sweetness and the black pepper.
